Day 95 – Peanut Butter and Honey Cupcakes

I love honey! With biscuits. With peanut butter. With tea. With a spoon. Whatever! So, no way I could resist these Peanut Butter & Honey Cupcakes (recipe below from A Beautiful Mess)

And today’s book is Lucy Sullivan is Getting Married by Marian Keyes.

Cupcake     Mini-Cupcake

These cakes are extremely dense and quite moist.  They don’t have an overly exciting flavor alone. They almost remind me of the texas sheet cake cupcakes, but not as strong.

Peanut-Butter-frosting

The frosting is very smooth and creamy, but easy to pipe.  It doesn’t have a very strong peanut butter flavor. More like a buttercream with peanut butter instead of a peanut butter frosting.

They are better together. It’s almost like a peanut butter and honey sandwich, cause the cupcake is such an even flavor. The honey is the most stand-out, which is kinda surprising. It can easily overpower the delicate frosting, so really pipe that on thick.

Scoring Sheet:

  • Cupcake Taste: 2.5
  • Frosting Taste: 4
  • Overall Taste: 3.5
  • Appearance: 4 (it’s a creative design, but it was hard to get a great pic cause the honey is so reflective…)
  • Ease of Making: 4
  • TOTAL: 18

RECIPE

Peanut Butter & Honey Cupcakes (recipe from A Beautiful Mess)

Cupcakes

2 1/2 cups all purpose flour

2 cups sugar

2 teaspoons baking soda

1/2 teaspoon salt

1/2 tablespoon vanilla extract

2/3 cup oil (vegetable, canola or peanut)

2 teaspoons distilled white vinegar

2 cups water

Frosting:

4 sticks of softened butter (2 cups)

1/4 teaspoon vanilla extract (the clear kind is better for frostings)

2-3 cups powdered sugar

1/3 cup peanut butter
