Day 85 – Apple Pie Cupcakes

First, I need to wish a very happy birthday to two of my dearest friends, Jen & Johnny.  Neither one of them lives anywhere near me, but that doesn’t mean I can’t celebrate them with a cupcake!  So, enjoy the tip video (hint: it’s about cocoa) and then dig into today’s yummy cupcake!

Tis the season for apples!!  Apple picking, apple desserts, apple cider….well, you get the point.  So, when my friend, (and one of my biggest supporters!) Christy, showed me these Apple Pie Cupcakes with Cinnamon Buttercream Frosting (recipe below from Cook’n is Fun), there was no way I could resist!  (Oh, and today’s pumpkin is a thumb-tack pumpkin.)


The cake is dense, moist and crumbly.  It almost tastes like an almond cake, but there’s no almond in it. Very light, almost a hybrid of vanilla & angel food cake.


The frosting is soft and creamy. Pipes on nicely, but kinda droops after a while. It has a really nice, sweet cinnamon taste.

This is yummy all together. The little tart and small crunch of the apples really breaks up the smoothness of the cupcake and the frosting. The flavor balance is really nice.  Thanks, Christy, for the recommendation!!  These were definitely worth trying!

Notes: The recipe didn’t specify what temperature the oven should be, so I baked at 350, and that seems to work exactly right based on time. Minis barely came out of the pan, but then when I cored and filled, the ones that did come out couldn’t even stand up. So, no minis.

  • Appearance: 4 (based on the one designed like the recipe’s website, with apples overflowing)
  • Ease of Making: 3.5 (it is 3 parts, but none of them are complicated at all)
  • TOTAL: 20


Apple Pie Cupcakes with Cinnamon Buttercream Frosting (recipe below from Cook’n is Fun)

For cupcakes:

  • 3 cups sifted cake flour
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • 1 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 4 eggs
  • 1 ½ tsp. vanilla extract
  • 1 cup milk

For the apple filling:

  • 2 tbsp. butter
  • 2 tsp. cinnamon
  • 2-3 tbsp. sugar
  • 3 large Granny Smith apples, peeled, cored and diced

For Cinnamon Buttercream Frosting :

  • 1 cup unsalted butter at room temperature
  • 6 to 8 cups confectioners’ sugar, sifted
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • up to 1 tablespoon cinnamon
