Day 75 – Jack Daniel’s Dark Chocolate Cupcakes

Nothing like a little Jack to get your week rolling, right?  Ummmm… I have that backwards?!  Anyway, enjoy Musical Monday along with these Jack Daniel’s Dark Chocolate Cupcakes (recipe below from Sasaki Time)!!

Musical Monday – “Dear Future Girlfriend” – Clay Cartland

The cupcakes have a good, thick consistency – a little sticky. Very much like devil’s food cake.  You get a chocolate taste first, then the whiskey. It’s a lot more prominent than I would have guessed in the cake alone.


The frosting is like a whipped mousse by the end.  It has a very dark chocolate taste, with a hint of whiskey, which is (again) not what I would have expected. I thought it would be stronger in the frosting than in the cake.

Overall, it’s a lot more chocolatey than it is apart. The whiskey makes an appearance just at the end with a little bite and that little burn in my throat.

Note: I’ve never had to make a whole ganache just to put it inside the buttercream. Recipe treated ganache a lot like caramel usually gets used.

Scoring Sheet:

  • Cupcake Taste: 3.5
  • Frosting Taste: 3.5
  • Overall Taste: 4.5
  • Appearance: 3.5
  • Ease of Making: 2.5 (ganache isn’t terribly hard and batter is very easy, but it’s a definite 3-part cupcake)

Jack Daniel’s Dark Chocolate Cupcakes (recipe from Sasaki Time)


  • 2 Cups (10 ounces) all purpose flour
  • 3/4 cup (3.75 ounces) coco powder
  • 2 cups (14.5 ounces) granulated sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. kosher salt
  • 2 eggs
  • 1/2 cup super strong coffee
  • 1/2 cup Jack Daniels Whiskey
  • 1 cup buttermilk
  • 1/2 cup vegetable oil


  • 16 ounces good quality dark chocolate 65-72 %, chopped into small pieces 1/4 inch or less.
  • 3/4 cup heavy cream
  • 2 Tbsp. unsalted butter, softened
  • 1/4 cup Jack Daniels Whiskey


  • 1 lb. unsalted butter, softened
  • 1- 3 ounce package white chocolate, vanilla or cheesecake instant pudding mix
  • 2 cups Dark Chocolate Whiskey ganache
  • 1/2 cup sifted dark cocoa powder
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • more whiskey to taste
