Day 74 – Chocolate Mocha Cupcakes

It’s a beautiful Sunday! Curl up with a nice mocha cupcake and enjoy this weather. Chocolate Mocha Cupcakes (recipe below from Today’s Mama).

The cupcakes are really dense. Maybe a little dry – though the full-size is better.  The taste is better in the full-size too. It had a nice, light chocolate flavor, not a strong coffee taste though, which surprised me.


The frosting is really thick and extremely stable for piping.  It’s chocolatey but not terribly dark.

Together they have a nice chocolate flavor. You get a little mocha in the darkness of it, but it’s not a strong coffee flavor by any means! This would be a great, chocolate cupcake for a party. Nice, even flavor, not too strong or rich. And, you can finish a whole one without being sick.

Note: the recipe calls to mix in vanilla, but never gives an amount. I put in 1 tsp, cause that’s the typical amount.

Chocolate Mocha Cupcakes (recipe from Today’s Mama)

1 ¼ cups all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking powder
½  tsp baking soda
½  tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 egg
½  cup milk
½  cup coffee,cooled

Evil Chocolate Frosting
3 oz unsweetened chocolate
3 Tablespoons butter
3 cups powdered sugar
1 teaspoon vanilla
½ teaspoon salt
5 Tablespoons sour cream
Up to 3 Tablespoons milk
