Day 68 – Homemade Funfetti Cupcakes

Alright.  It’s Monday again.  So, we need something fun and energetic to get us rolling today, right?  What better than Homemade Funfetti Cupcakes (recipe below from Gimme Some Oven)?!  It’s like a party in a cupcake!  2 in 1!

But, first, it’s Musical Monday.  Enjoy the video below while you devour these cupcakes!

Now, onto the Funfetti!

Cupcake     Mini-Cupcake

The full-size cake is a little thick, not hard to eat, just requires a little more chewing than usual.  The mini is a little dry/tough.  But they have a nice almond flavor.  It’s odd, because you’re expecting plain white cake.  Nice surprise.


The frosting is creamy and light.  It tastes like a sugar frosting with vanilla, not a vanilla frosting.  The vanilla feels like a nice hint at the end.

These are definitely better together.  The frosting really brings out the almond is the cupcake and curbs some of the cake’s density. Lightens it up a bit.  Note: when I put them together, I really like the mini. Doesn’t feel quite as dense and it’s adorable! These are a nice twist on the typical Funfetti cupcake. The almond makes it just slightly different and most definitely not a box cake, which I think is great!

Scoring Sheet:

– Cupcake Taste: 2.5

Homemade Funfett Cupcakes (recipe below from Gimme Some Oven)

Cupcake Ingredients:
    • 1 1/4 cups all-purpose flour
    • 2 tsp. baking powder
    • 1/2 tsp. salt
    • 6 Tbsp. unsalted butter, room temperature
    • 1 cup sugar
    • 3 large egg whites
    • 1 tsp. vanilla extract
    • 1/4 tsp. almond extract
    • 1/2 cup milk
    • 1/4 cup rainbow sprinkles
Vanilla Buttercream Frosting Ingredients:
  • 1 cup unsalted butter, softened
  • 3-4 cups confectioners (powdered) sugar
  • 1/4 tsp. salt
  • 1 Tbsp. vanilla extract
  • up to 4 Tbsp. milk or heavy cream
