Day 62 – Apple Cinnamon Cupcakes

October is here!!  The second Monthly Champ has been chosen (check it out here if you missed it). We are 62 days into this 365 day tour of cupcakes!  Wow!!

Now, this month, to celebrate Halloween Candy (yeah, that’s right.  Not necessarily Halloween, but Halloween Candy!) all of my cupcakes will be displayed with various candies!  Enjoy!!

To get October rolling, I decided on the classic Fall combination of Apple & Cinnamon. Apple Cinnamon Cupcakes (recipe below from Cupcakes Are My New Love)

These cakes are dense and thick, a little like muffins.  They have a nice cinnamon (with slight apple) taste.  Not very sweet.


(Also, it’s gonna be a “Spoon-full of Frosting” kinda month too.  Don’t know why.  Just felt like it.)

This frosting is a thin buttercream.  It reminds me a lot of cream cheese glaze frosting.  Ya know, like the cream cheese frosting that runs of a warm, gooey cinnamon roll…..sorry, I spaced out for a minute.

This cupcake is really nice all together.  Not a terribly sweet dessert, so it’s perfect for people who don’t LOVE sugar.  It’s the best fruit-in-the-batter one yet.  Apple isn’t very strong, but it gives you just a hint of sweet/tart in the cupcake.  (Note:  shredded, as opposed to chopped apples like the other recipes have called for, makes for a much better balance and distribution.)

Scoring Sheet:

– Cupcake Taste: 3

– Frosting Taste: 4.5

– Overall Taste: 4

– Appearance: 3.5

– Ease of Making: 4.5

– TOTAL: 19.5

RECIPE (from Cupcakes Are My New Love)

For the cupcakes (makes 8):

  • 1 egg
  • 60 ml evaporated milk
  • 35 gr butter
  • 1/2 tsp vanilla extract
  • 170 gr flour
  • 55 gr sugar
  • 1 tsp ground cinnamon
  • 1/2 tbsp baking powder
  • 1 grated Golden apple
For the buttercream:
  • 100 gr buttercream
  • 100 gr icing sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
