Day 43 – Chocolate Coconut Cupcakes

Now, the cupcakes. More specifically, they are named Award-Winning Chocolate Coconut Cupcakes (recipe below from Chocolate Moosey).  This combo seems to be even more popular than I could have imagined.  And, I’m always game for a little chocolate and coconut testing.  And, award-winning?  Well, of course!

Chocolate-Cupcakes

These cakes are extremely delicate and airy.  (The minis didn’t even make it out of the well-sprayed pan, they just crumbled — hence no photos.)  The cupcake has a nice, light chocolate taste.

The filling is remarkably creamy, even though it’s chunky.  There’s a nice balance between the almonds (which add salt and crunch) and the sweet of the coconut.

The frosting is light and fluffy.  It doesn’t taste like a buttercream, it’s more like a whipped topping.  Sweet and coconut-y.

Yummy!  It’s.  Very.  Yummy!  Chocolate and coconut are the stars, but it’s not rich or heavy at all.  Very light and airy all around.  And, in case I didn’t mention it, yummy!

RECIPE

Award-Winning Chocolate Coconut Cupcakes (recipe from Chocolate Moosey)

Ingredients
Cupcakes
  • 1 oz bittersweet chocolate
  • 1/2 cup cocoa powder
  • 2/3 cup hot coffee
  • 1/3 cup whole milk
  • 1 1/3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 10 Tbsp butter, softened and cut into cubes
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 3 eggs
  • 1 tsp vanilla
Filling
  • 3/4 cup coconut milk
  • 1/2 cup sugar
  • 2 Tbsp flour
  • 2 1/2 cups shredded coconut
  • 1/2 cup chopped almonds
  • 1 tsp vanilla
Frosting
  • 3/4 cup coconut milk
  • 1 Tbsp flour
  • 3/4 cup butter
  • 3/4 cup superfine sugar
  • 1/4 tsp coconut extract
