Day 42 – Patriotic Cocoa Cupcakes

In honor of 9/11, I decided on some Patriotic Cocoa Cupcakes (recipe below from Hershey’s).

And, because I’m fortunate enough to live in NYC, I visited the Freedom Tower.  I also want to shout out to the FDNY guys I talked to at Jackson Hole yesterday. Thanks for all your hard work!

So, I hope you all enjoy these patriotic treats as much as I do and get a little patriotic with me today.

Cocoa-Cupcakes     Mini-Cocoa-Cupake

These cupcakes are a lot like Devil’s Food.  Dark, dense cupcakes.  The full-size has a better chocolate flavor, but the mini is not bad.


This is a fluffy but creamy buttercream.  Vanilla and sugary.  And very buttery.


This is another box-cake cupcake.  Not bad at all, but not magical.  A good, solid combination.  The vanilla off-sets the chocolate nicely.  Neither one is overpowering.  It’s a very sweet, sugary combination.  Perfect for a get-together!  And, bonus, it’s another 1-bowl cupcake!!

– Cupcake Taste: 3.5

– Appearance: 4 (it’s all about the decorating.  They can be a 5 or a 1 based on how you design them.)

Patriotic Cocoa Cupcakes (recipe from Hershey’s)


  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY’S Cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk or sour milk*
  • 1 cup boiling water
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • VANILLA FROSTING (recipe follows)
  • Cake stars OR blue and red decorating icing (in tube)
