Day 40 – Best Homemade Vanilla Cupcakes

So, that’s the name these cakes were given.  (In case you were confused.)  I haven’t deemed anything “The Best”…not yet, at least.  But, the Best Homemade Vanilla Cupcakes (recipe below from Squidoo) definitely needed to be put to the test.  And, what a good way to start off the week, right?

Now, onto the cakes!

Vanilla-Cupcake     Mini-Vanilla-Cupcake

These cakes have a good density and moist-ness (??).  Exactly what you want in a cupcake.  The full-size almost has a corn bread texture.  They have a nice, light vanilla flavor.  The mini actually packs more of a vanilla punch (yes, I know that doesn’t sound dramatic – vanilla punch – but trust me).


Smooth, milky buttercream.  Good stuff.  It’s nice and evenly sweet.  Vanilla flavor, but not too strong.

There’s a nice balance in this cupcake.  No competing flavors or textures.  And, shockingly, I recommend the minis over the full size.  You get a big vanilla flavor in the bite-sized package.

This is a good, plain cupcake.  There’s nothing overly exciting about it, but nothing bad about it.  It’s a fantastic option if you have vanilla/white cake fans or (those crazy) people who don’t like chocolate.

The Best Homemade Vanilla Cupcakes (recipe from Squidoo)


  • 3/4 cup butter
  • 3 eggs
  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 3/4 cups sugar
  • 3 teaspoons vanilla (add more for a super-vanilla taste)
  • 1 1/4 cups milk
  • 2 1/2 teaspoons baking powder

Vanilla Frosting


  • 3/4 cup butter softened
  • 2 pounds powdered sugar (around 8 cups)
  • 1/3 cup milk
  • 2 teaspoons vanilla
