Calling all fans!

There are a couple new, exciting (and fun) additions I’m making to My Year of Cupcakes!  And I just couldn’t wait to tell you about them!!

First, as some of you know, starting in September I’ll be adding a “Helpful Hint” to each Weekly Winner post.  Just some little tricks of the trade that might help you too.  (If you have some favorites, please please please send them to me: yearofcupcakes@gmail.com)

Second, I’m compiling an intro video (or several of them, to be more accurate) to kick off all of the upcoming videos.  Here’s where you guys come in.  Take a selfie video saying “My Year of Cupcakes”.  That’s it.  And then email it to me: yearofcupcakes@gmail.com.  Here’s a link of me doing a couple of examples.  More than anything, I want a variety!  So, get creative – funny, serious, accents, other languages, individual, groups, whatever you can come up with.  (Note: my submitting a video, you are giving me the right to use it.)

And third, just to add even more fun to all the crazy fun we are already having, each Monday will be “Musical Monday” starting in September.  A different video for your listening and viewing pleasure, from myself and a variety of artists.  So, get excited.  It’s gonna be amazing.  And, as per usual, if you are interested in submitting a video, contact me for details and info!

Day 26 – Double Chocolate Cupcakes with Crispy Magic Frosting

And, I say, who wouldn’t want this?!  Double Chocolate Cupcakes with Crispy Magic Frosting (recipe below from Confessions of a Cookbook Queen).  Well, if I have to…

Double Chocolate Cupcake          Mini Double Chocolate Cupcake

It’s a thick, stick-to-your-mouth, chocolate cake.  Rich chocolate flavor.  Not bitter at all.  The chocolate chips are a nice break from the thick chocolate.  Really easy to make – all ingredients go straight into the mixer.  Really quick.

(Here’s the tough part.  This recipe calls for 1 egg white on her page.  I had to try this 3 times to get it to anywhere near the consistency it’s supposed to be.  After getting (crazy) frustrated, I did some research.  I found this version of the frosting, which called for 2 egg whites.  That would have made a HUGE difference.  But, alas, I have to judge on the way this recipe wrote it.)

The frosting tastes literally like grainy butter.  Not tasty.

They look cute, and perhaps we will retry this recipe later, with the correct number of eggs, and see how it’s graded then!

Scoring Sheet:

– Cupcake Taste: 3.5

– Frosting Taste: 1 (see above explanation)

– Overall Taste: 2 (it was like eating a buttered cupcake)

– Appearance: 3.5

– Ease of Making: 2 (hard to say.  Cake was really easy.  Frosting would be easier when done right.)

– TOTAL: 12 (I can’t stress enough that this would be better with the corrected frosting…)

RECIPE

Double Chocolate Cupcakes with Crispy Magic Frosting (recipe from Confessions of a Cookbook Queen)

Ingredients

  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1/2 cup Dutch process cocoa powder (I used Hershey Special Dark)
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla
  • 1/2 cup boiling water
  • Crispy Magic Frosting:
  • 2/3 cup granulated sugar
  • 1 large egg white
  • 1 1/2 cups (3 sticks) salted butter, room temperature and cut into 2 inch chunks
  • 1 2/3 cup powdered sugar
  • 2 TBS milk
  • 1 TBS vanilla
