Day 25 – Cherry Coke Float Cupcakes

I mean, yeah!  Cherry Coke Floats are yummy.  But in cupcake form?  I gotta try it!!  And I found just the Cherry Coke Float Cupcake recipe (below from Moogieland).  And who doesn’t need a little fun to finish off the weekend?

This cake is dense and moist.  Like Devil’s Food cake, but a little lighter in color.  It’s very smooth.  You don’t really get the ‘cherry’ unless you get part of the center.


Ok, so not really frosting.  Just whipped cream really.  But, what else would you expect from a Coke Float?  Make sure not to oversweeten it, cause you won’t need it once you add chocolate syrup and cherry.

This works.  I don’t quite know why, but I feel like it works in it’s simplicity.  The cake is light and tasty, the whipped cream is easy.  No frills.  Simple, fun dessert.  Only thing I can say is that it doesn’t taste like Cherry Coke.  It’s more like a Cherry Chocolate cupcake.  Which works too!

(Note: This is abundantly easy to make!  No mixer required for the cupcake.  And whipped cream is the easiest topping — you can even buy it in the can if you need to!)

Cherry Coke Float Cupcakes (recipe from Moogieland)

1 1/2 Cups flour
3/4 Cup sugar
1/2 tsp baking soda
1/4 tsp salt
1 large egg
1/2 Cup buttermilk
2 tsp vanilla
1/2 cup unsalted butter
3 Tbs cocoa powder
3/4 Cup Coca-Cola
1/4 cup marachino cherry syrup
24 marachino cherries
whipped cream frosting ice-cream chocolate shell
