Day 15 – Brownie Cupcakes with Marshmallow Frosting

First, I dedicate today’s (fantastic) cupcakes to my good friend and birthday girl, Nikki Allred! Hope you like these ones!!

And, what’s not to like?  Brownie Cupcakes with Marshmallow Frosting (recipe below from Cooking Classy).  Chocolate.  Marshmallow.  Yum!

Thick, gooey brownie-ness.  That’s how it feels.  That’s how it tastes.  (It is slightly more stable than a slightly-undercooked brownie, so you can in fact pick it up and eat it.)  Super easy to make – No mixer required.


Typical egg white frosting.  Tastes like a soft, creamy marshmallow.  I love this frosting.  Ironic that you need a mixer for the frosting, but not for the cupcake.

Yum!  Ooey, gooey yumminess…Literally tastes like a brownie with a toasted marshmallow on top.  What’s not to like?!  Next time, I will spray the liners, cause I still lost some cake when I peeled it away…can’t have that!  (Note: again, it’d be easier to toast with a kitchen torch than with a broiler, but use what ya got.)

Brownie Cupcakes with Marshmallow Frosting (recipe from Cooking Classy)


    • 1 1/4 cups all-purpose flour
    • 1/4 tsp baking powder
    • 1/4 tsp salt
    • 1 cup granulated sugar
    • 1/2 cup packed light-brown sugar
    • 1/2 cup + 2 Tbsp cocoa powder
    • 3/4 cup butter, melted
    • 2 large eggs
    • 1 1/2 tsp vanilla extract
    • 2 Tbsp milk
Marshmallow Frosting
  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract
