Pineapple Coconut Dream Cupcakes (recipe below from Creole Contessa). For those who are wishing it was still summer…
The cakes are dense and moist. Now, I’ll confess, I’m not a huge pineapple fan, but these have a nice, sweet flavor. (note: be sure to buy chunks of pineapple, not crushed. Straining the crushed is a HUGE pain!)
I could eat that whole bowl…no joke. It’s fluffy. Creamy. Coconut-y. (yeah, it’s a word…) Just yummy!
They are nice together. The frosting brings out the best in the cake. But, the cupcake is too dense for the fluffy frosting — makes you want a lighter, airier cake, more like a hummingbird cake.

– Frosting Taste: 4.5 (seriously. gimme a spoon.)

Pineapple Coconut Dream Cupcakes (recipe from Creole Contessa)
2 sticks butter, room temperature
4 oz. cream cheese, room temperature
1/2 cup vegetable oil
6 eggs, room temperature
1 cup pineapple juice
1 cup crushed pineapple, drained, patted dry
1 cup coconut, shredded
1/2 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons vanilla extract
Coconut fluff glaze (recipe below)

1 cup coconut, shredded
