Day 1 – Lemon Cupcakes with Strawberry Lemonade Frosting

Here we go!  Day 1.  Finally here!!

I decided to start with these Lemon Cupcakes with Strawberry Lemonade Frosting (recipe below from Baked Perfection) cause they looked so yummy AND cause it’s still a little toasty outside.  So, lemon and strawberry…totally refreshing!

These cupcakes were totally simple to make.  Nothing complex or difficult, which I love!  Let’s dive right in.

Lemon Cupcake             Mini Lemon Cupcake

They’re adorable.  Light and beautiful.  And, the lemony aroma when they come out of the oven…yum!  The cake is super moist.  It’s dense, but also a little airy.  It translates easily into a mini cupcake, just bake for about 1/2 the time.  By itself it’s not the most exciting lemon cupcake.  I almost wanted a bolder lemon flavor (perhaps next time I’ll add a dash of lemon extract).  But, just wait, it gets better.

Strawberry Lemonade Frosting

Oh.  My.  Gah!  This frosting completely captures the candied strawberries & cream flavor.  The key is good preserves (I used Bon Maman).  It’s a light, smooth buttercream.

The balance in these cupcakes is really nice – though, I will say, the balance in the full size is better cause you get bolder flavors.  They remind me of my favorite Lemon Ricotta Cookies (by Giada deLaurentiis).  They would be great for outdoor parties, especially on a summer day cause they are so refreshing.  They aren’t a “closer” cupcake because you can definitely eat more than one (dangerous!!).  But they could simply be called Strawberry Lemonade cupcakes – they are sweet, slightly tart and very refreshing.  As well as adorable to look at!

Lemon Cupcakes with Strawberry Lemonade

1 cup butter, softened
2 cups sugar
3 eggs
4 teaspoons grated lemon zest
4 tablespoons of lemon juice
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sour cream

Strawberry Lemonade Buttercream2 sticks butter, softened
1 tsp vanilla extract
1/3 cup strawberry jam

6 cups powdered sugar
